Jon McCarthy
Wine & Beverage Director
Jon fell in love with northern California during a road trip and immediately moved west. He worked at Charlie Palmer’s Dry Creek Kitchen, where he met Chef Valette. Growing up in northern Virginia’s burgeoning wine country, fine food and wine electrified Jon at an early age. Eventually moving down the block to Chalkboard before heading across the country to NYC, Jon sommed at Aureole and was Beverage Director at the Archer Hotel + Rooftop. He came back to California to join the Matheson team and curate its many beverage programs, from the cellar to the wine wall to the rooftop bar.
